Our Norma starts from a pasta that already tastes of Sicily: rigatoni made from ancient Sicilian grains, bronze-cut to achieve that rough surface that holds the sauce with every bite. The topping stays on the island, with Sicilian cherry tomatoes slowly cooked and golden fried eggplants. To finish the dish, cacioricotta comes straight from a dairy in Puglia. Three regions, few ingredients, and one simple rule: choose carefully everything that ends up on the plate.
